These lovely little baked samosas make a really simple and healthy supper or snack. You can have fun folding the filo pastry around the delicious curried lamb and vegetable filling, just make sure you cover the rest of the pastry with clingfilm or a damp towel to stop it drying out.

Ingredients
  1. 1 small red onion
  2. 1 clove of garlic
  3. 100g peeled white or sweet potato
  4. 1 tablespoon sunflower oil
  5. 200g lamb mince
  6. 1/2 teaspoon turmeric
  7. 1 teaspoon garam masala
  8. 1 teaspoon cumin
  9. 2 tablespoons mango chutney
  10. 2 tablespoons peas
  11. 1 tablespoon chopped coriander
  12. 4 sheets filo pastry
  13. 1 free-range egg (beaten)
Instructions
  1. Finely chop the onion and garlic (see How to Chop an Onion for tips)
  2. Peel the potato and cut into very small cubes (about 5mm x 5mm)
  3. Heat the oil in a frying pan and add the onion, garlic and potato
  4. Fry gently for a couple of minutes, then add the lamb and spices and fry until the meat has browned
  5. Remove the pan from the heat and stir in the mango chutney, peas and coriander
  6. Cut the sheets of filo into six strips each about 10cm wide
  7. Paint a border of beaten egg around a strip of filo, then place a spoonful of mixture in the bottom corner and fold it over, using the egg as glue to stick down the edges
  8. Keep folding diagonally up the strip until you have a small triangle
  9. Seal the edge and brush the top with beaten egg
  10. Place on a greased baking tray and bake for 15 minutes
  11. Serve with more mango chutney and some natural yoghurt on the side
