Kids aren’t massive fans of coffee, so for an Italian cookery workshop I came up with this alternative to a traditional tiramisu using homemade orange syrup instead of coffee, and chocolate chips which are a lot less faff than grating chocolate. Half fat creme fraiche is fine, but definitely go for full fat mascarpone, the skinny version just isn’t the same!

  1. 8 - 10 sponge fingers
  2. Juice of two large oranges
  3. 1 tablespoon caster sugar
  4. 1 tablespoon water
  5. 100ml half fat creme fraiche
  6. 125g mascarpone
  7. 1 tablespoon icing sugar
  8. 50g plain chocolate chips
  1. Lay the sponge fingers in one layer on a plate or in a pasta bowl
  2. Squeeze the orange juice into a small saucepan and add the sugar and water
  3. Heat gently for a few minutes until the sugar has dissolved, then pour the syrup over the sponge fingers and leave to soak
  4. Beat the creme fraiche, mascarpone and icing sugar in a bowl
  5. Line the bottom of four glasses or large ramekins with half of the sponge fingers, then spread over half of the cream mixture
  6. Sprinkle with half of the chocolate chips and then repeat the process with another layer of fingers and cream
  7. Decorate with the remaining chocolate chips and chill for at least an hour before serving
