Super Easy Date & Chocolate Chip Cookies

These cookies can literally be knocked up in half an hour and are such a crowd pleaser. The dates add extra chewy sweetness, and might even help introduce your kids to a new ingredient. If you don't want to make 24 at once, just freeze half of the mixture to defrost and bake later.

Ingredients
  1. 120g unsalted butter (softened in the microwave)
  2. 100g light brown sugar
  3. 50g granulated white sugar
  4. 2 free range egg yolks
  5. 2 tablespoons honey
  6. 1 teaspoon vanilla extract
  7. 250g plain flour
  8. 1/4 teaspoon bicarb soda
  9. Pinch salt
  10. 12 dates (chopped)
  11. 4 tablespoons chocolate chips
Instructions
  1. Preheat the oven to 170°C (150°C fan) and line a baking tray with greaseproof paper
  2. Soften the butter in the microwave until it’s just starting to melt, then beat in the sugars (see tips on Creaming Butter and Sugar)
  3. Mix in the egg yolk, honey and vanilla (See tips on Separating Eggs)
  4. Stir in the flour, bicarb, salt, dates and chocolate chips to form a stiff dough
  5. Drop 24 balls of the mixture onto the baking tray at least an inch apart (you might have to bake in two batches) and press them down lightly with a fork
  6. Bake for 10 minutes until just starting to brown around the edges, then allow to firm up before moving to a cooling rack
