Easter Recipe – Little Lemon Chickcakes
Little Lemon Chickcakes

This is a really fun Easter recipe for kids. It’s a simple “all-in-one” cake recipe; the mixture can be beaten by hand or with an electric whisk. And there’s no messing about with piping bags and nozzles (unless you want to of course), just spread the icing on with an ordinary cutlery knife or the back of a teaspoon. The sugarpaste eyes and beaks are simple but effective, and the results are delicious!
For the cakes
  1. 160g softened, unsalted butter (softened)
  2. 120g caster sugar
  3. 2 large, free-range eggs
  4. 160g plain flour
  5. 2 teaspoons baking powder
  6. 2 teaspoons lemon extract
For the decoration
  1. 100g softened, unsalted butter
  2. 200g icing sugar (sifted)
  3. 2 teaspoons lemon extract
  4. 2 teaspoons yellow food colouring
  5. Black and orange sugarpaste
  1. Preheat the oven to 180°C (160°C fan)/gas mark 4
  2. Place all of the cake ingredients in a bowl and beat with an electric whisk until smooth (take care not to overmix)
  3. Spoon the mixture into 12 cupcake cases in a bun tray
  4. Bake for 15 minutes until risen and golden on top, then leave to cool
  5. To make the icing vigorously beat together all of the ingredients and spread a generous layer on top of each cake
  6. Roll 24 small balls of black sugar paste for eyes, and cut twelve beaks from the orange sugar paste, then use these to finish off your chicks before serving
