Rubbing butter into flour

This technique is the first step to making pastry, shortbread and some biscuits. Cut the butter into small chunks first, then sprinkle them over the flour so the pieces are not stuck together. Kids have hot little hands so it’s important to work as quickly as possible so the butter doesn’t melt. Use just your fingertips to work the butter and flour together, getting right to the bottom of the bowl to incorporate all the dry ingredients (I always say you’re trying to get the butter to suck up all the flour) until you have a mixture that looks like breadcrumbs with no lumps of butter left.
