Giant Beef Cannelloni

Beef Cannelloni is a favourite in our house, and using fresh lasagne sheets makes it so much easier to make with kids. This recipe incorporates lots of useful skills like chopping an onion and making a cheese sauce, something everyone should know how to do. And the filling is basically a bolognaise sauce, another essential recipe that everyone should have in their repertoire. Start by getting all the veg chopped, then make the cheese sauce whilst the filling is simmering away.

For the filling
  1. 1 tablespoon olive oil
  2. 1 onion (finely chopped)
  3. 1 garlic clove (finely chopped)
  4. 1/2 carrot (peeled and finely chopped)
  5. 1/4 red pepper (finely chopped)
  6. 250g British beef mince
  7. 1 tin chopped tomatoes
  8. 2 teaspoons Worcester sauce
  9. 3 tablespoons frozen peas
  10. 4 sheets fresh lasagne
For the cheese sauce
  1. 30g butter
  2. 30g plain flour
  3. 350ml whole milk
  4. 40g grated cheddar
  5. Grated parmesan
Instructions
  1. Heat the olive oil in a frying pan and gently fry the onion, garlic, carrot and pepper for five minutes until softened
  2. Add the beef and continue to fry for several minutes until it starts to brown, then add the tomatoes and Worcester Sauce plus some salt and pepper and leave to simmer very gently for 20 minutes
  3. Weigh the butter and flour into a small pan and cook gently for a couple of minutes, then pour in the milk and whisk briskly to get rid of any lumps
  4. Carry on whisking over a low heat for a few minutes until the sauce has thickened, then mix in the grated cheese and season with a little salt and pepper
  5. When the beef filling is done, stir in the peas then leave it to cool for a few minutes
  6. Lay the two lasagna sheets on a chopping board overlapping by about an inch in the middle and spoon half of the filling along the bottom of both sheets
  7. Roll the lasagna sheets up around the filling, then carefully lift the giant cannelloni into a small ovenproof dish
  8. Repeat this process with the rest of the filling so you have two giant cannelloni side by side in the dish
  9. Pour the cheese sauce over the cannelloni, sprinkle over some grated parmesan then bake in a preheated oven at 180°C (160°C fan) for 20 - 25 minutes
  10. Serve with a fresh green salad
