This gluten-free granola is soooo easy and versatile. Make a big batch and sprinkle it on stewed seasonal fruit to make a very simple crumble  as I have here. Serve it on yoghurt, mix it with a couple of eggs and bake it to make sugar-free granola bars or simply have it for brekkie with some milk. I'd also highly recommend adding some dried fruit, but make sure you do this after you bake it.
For the granola
  1. 50g unsalted butter
  2. 50g honey
  3. 350g rolled oats
  4. 100g unsweetened dried coconut
  5. 150g chopped mixed nuts
For the filling
  1. 15 ripe plums (stones removed)
  2. 2 tablespoons of light brown sugar
  3. 1 tsp cinnamon (optional)
  1. Preheat the oven to 160°C (140°C fan)
  2. Weigh the butter and honey into a small bowl and pop in the microwave until the butter has melted, then stir well
  3. Transfer the butter and honey to a large mixing bowl, and add the oats, coconut and nut and stir really well until the whole lot is well combined
  4. Divide the granola between two baking trays and bake in the middle of the oven for 12 - 15 minutes until golden brown (halfway through the cooking time remove the tray from the oven and carefully stir the granola so it cooks evenly)
  5. Allow it to cool completely before transferring to a large Kilner jar or ziplock freezer bag
  6. To make the filling for the crumble place all the ingredients in a saucepan and cook on a gentle heat for around ten minutes until the plums are just starting to break down
  7. Serve the fruit hot or cold with a generous sprinkling of the granola mix and a blob of yoghurt (or vanilla ice cream for a treat!)
