Easy Homemade Curry Paste

This super simple homemade curry paste takes minutes to prepare with just a few basic ingredients (no fancy seeds to fry and grind) and a blender. (Or getting the kids to bash it to smithereens with the end of a rolling pin works just as well!). Add your chosen meat or vegetables and some coconut milk to make a delicious, nutritious curry from scratch. 

Homemade Curry Paste

Ingredients
  1. ½ large onion
  2. 1 large garlic clove
  3. 3cm cube fresh ginger
  4. 1 ½ tablespoons of curry powder
  5. 1 teaspoon ground coriander
  6. 1 teaspoon ground cumin
  7. 1 teaspoon hot chilli powder (optional)
  8. ½ teaspoon turmeric
  9. 1/4 tin chopped tomatoes
Instructions
  1. Place all of the ingredients in a blender with a good pinch of salt and blend until smooth
  2. Soften a chopped onion in a pan, then add the paste and fry for a couple of minutes
  3. Add your chosen meat and/or veg, plus half a tin of coconut milk and 200ml of stock and simmer until tender
  4. Serve with rice, mango chutney, yoghurt and a good sprinkle of chopped coriander
