Strawberry Shortcakes are such a lovely summertime treat, and are very easy to make. Just make sure the butter is fully rubbed in to the dry ingredients (otherwise your biscuits come out of the oven lacey and brittle). If it's very warm outside a good tip is to run hot little hands under the cold tap before starting to rub the butter in (dry them first!) as this will help stop it melting before it's fully incorporated. But don't overwork the dough either or it will be tough. Usually you would roll out shortbread dough, but it can be quite sticky so with kids it's much easier just to roll it into balls and flatten them by hand. Enjoy!
For the shortbread
  1. 150g unsalted butter (chilled)
  2. 190g plain flour
  3. 75g caster sugar
  4. Pinch salt
  5. 2 teaspoons lemon zest
For the filling
  1. 150g mascarpone (room temperature)
  2. 2 tablespoons icing sugar
  3. 2 teaspoons lemon extract
  4. 50g fresh strawberries (washed, dried and finely chopped)
  1. Preheat the oven to 180°C (160°C fan) and line a baking tray with greaseproof paper
  2. Place all the shortcake ingredients into a bowl and rub the butter into the flour with your fingertips
  3. When the butter is all rubbed in and the mixture starts to “clump”, bring it together into a ball
  4. Split the dough into 16 equal sized pieces and roll these into balls
  5. Place them at least an inch apart on the baking tray (you may have to bake them in two batches) and flatten out slightly with the palm of your hand
  6. Bake the shortcakes for 10 mins until just starting to turn golden around the edges
  7. While the shortcakes are cooling, make the filling by beating together the mascarpone, icing sugar & lemon extract until smooth, then stir in the chopped strawberries (mash them up a bit to really bring our their flavour)
  8. Sandwich the shortcakes together in pairs with a generous dollop of the filling
  9. Sprinkle with icing sugar and serve
