Marshmallow Mousse & Summer Fruit Tart

This is a fantastic recipe to make with kids because it produces a showstopping result but with a few shortcuts. (The topping is based on BBC Good Food recipe which I love.) The fruit gives it a lovely colour and melted marshmallows create a beautifully light mousse without faffing around with sheets of gelatine. It's a great opportunity for kids to practice the skill of gently folding (see Essential Skills page). If you are short of time you can use crushed biscuits mixed with melted butter for the base instead of making your own shortbread.

For the base
  1. 150g cold butter (cut into cubes)
  2. 180g plain flour
  3. 100g caster sugar
For the filling
  1. 300g fresh or frozen summer fruits (e.g. strawberries, raspberries, cherries or red and blackcurrants)
  2. 2 tablespoons icing sugar
  3. 100g mini marshmallows
  4. 200ml double cream
Instructions
  1. Preheat the oven to 180°C (160°C fan)
  2. Grease an 8 inch springform tin with a little of the butter
  3. Place all of the base ingredients into a bowl and rub the butter into the flourwith your fingertips (don’t take too long otherwise the butter will start to melt)
  4. Tip the mixture into your tin and press down with the back of a metal spoon to create a smooth, even base
  5. Bake the base for 12 - 15 mins until just starting to turn golden at the edges, then allow to cool completely
  6. Place the fruit in a saucepan and cook gently for a few minutes until it is very soft (this will take
  7. Work the fruit through a sieve until you just have the seedy pulp left (discard this) and place the fruit puree back into the saucepan
  8. Add the marshmallows and heat gently until they have melted, then stir and allow to cool
  9. Whip the cream till it just holds its shape (be careful not to overwhip it) then add it to the fruit mixture and fold together very gentlyuntil smooth
  10. Pour the filling over the base and chill for at least two hours before serving
