Pithiviers are traditionally a French dessert, made from a sweet almond filling sandwiched between two puff pastry discs. But a savoury centre works really well, and kids will love filling and packaging up these little pork parcels. Very similar to a sausage roll, this recipe also sneaks in some leek and butternut squash. I promise they'll still love it! They're also perfect for packed lunch boxes as an alternative to a sarnie.
For the filling
  1. 3 inch piece of leek (washed)
  2. 50g butternut squash (grated)
  3. 150g pork mince
  4. 1/2 tsp each (finely chopped) fresh thyme, rosemary & sage
  5. 500g all-butter puff pastry
  6. Flour for dusting
  7. 1 egg (beaten)
  1. Preheat the oven to 180°C (160°C fan)
  2. Finely chop the leek and place in a bowl with the grated squash, pork mince and herbs
  3. Season well with salt and pepper and squidge together with your hands until well-mixed
  4. Roll out the pastry to the thickness of a £1 coin and cut out sixteen discs using a 9cm cutter (you'll probably need to roll out twice)
  5. Lay eight of the discs on a greased oven tray and place a tablespoon of the filling in the middle of each one, then brush the edges with beaten egg and lay the rest of the pastry discs over the filling
  6. Press down around the edges so the pithiviers are well sealed, then brush each one with more beaten egg
  7. Bake them for 20 - 25 mins until golden brown on the top and bottom
