Smoked Salmon & Pea Pesto Pasta

A lovely summery recipe for kids which is healthy, seasonal and most importantly quick so it’s a great one to have them help you with after school if time is a bit short. Use a food processor to make the pesto, or if you prefer just get the kids to bash up the ingredients in a bowl with the end of a rolling pin. It’s delicious hot or cold, so make double portions and pop it in their packed lunch the next day.

For the pesto
  1. 150g frozen peas (defrosted)
  2. 2 tablespoons olive oil
  3. Large clove of garlic
  4. 2 tablespoons pine nuts (lightly toasted)
  5. Large sprig of fresh mint leaves
  6. 3 tablespoons grated parmesan
For the pasta
  1. Four portions of pasta
  2. 100g smoked salmon (chopped)
  3. 4 spring onions (finely chopped)
  4. 3 tablespoons crème fraîche
  5. Zest of half a large lemon
Instructions
  1. Place all of the pesto ingredients in a food processor and whizz to a rough paste
  2. Cook the pasta as per the instructions, then drain (keeping a couple of tablespoons of the cooking water for later)
  3. Heat a little oil in a frying pan and gently fry the smoked salmon and chopped spring onions for just a minute
  4. Add the cooked pasta and cooking water, pesto, crème fraîche, lemon zest and a good pinch of salt and pepper and mix thoroughly
  5. Serve hot or cold with an extra sprinkle of grated parmesan
